Our old wine cellar was built in traditional style in the 15th century by the diligent people of Mád. It has forty-one steps leading to the seven branches of the cellar. The total length of these branches are 272 meters with a floorspace of 750 m2. Its volumetric capacity is 2,000 hl., its depth is 12 meters. The summer temperature is 11-12 °C, in winter it is 10-11 °C, with a 85-90% of humidity.
Our barrels are made of Hungarian oak (Zemplén oak).
The oak is seasoned at least for two years before being made into barrels. During this period the weather makes the coarse wood softer, also decreasing the moisture content down to 12-15%. We use 220 l, 300 l, 400 l and 500 l barrels for aging wines. We try to buy at least five new barrels each year.
