Our wine making is always based on a low crop yield. The harvest is hand picked, and we postpone it to the very end of the season. We have not used insecticides and weed killer since 2005. During wine making, we do not use selected yeast, added sugar, or acid dimming, and we do not apply artificial malolactic fermentation.
