Our old wine cellar , built in traditional style in the 16th century by the diligent people of Mád, has forty-one steps leading to seven branches. The total length of these branches is 272 meters with a floor space of 750 squaremeter. Its volumetric capacity is 2,000 litres; its depth is 12 meters. The summer temperature is 11-12 °C; in winter it is 10-11 °C, with 85-90% humidity.
Our barrels are made of Hungarian Zemplén oak, seasoned for at least two years pior to construction. During this period, the weather makes the coarse wood softer, and also reduces the moisture content to 12-15%.
We use 220 l, 300 l, 400 l and 500 l barrels to age wines, trying to buy at least five new barrels each year.
